it's also quite appropriate as the prices in this luxury restaurant were astronomical.

What exactly did they do to the peas, and did the potato start out as a real one? It seems to have a lot of holes.
the peas were mashed. not mushed. they had almost a peanut butter texture, and tasted like peas freshly podded.
as for the potato, it was a bit like a fancy crisp. perhaps it had been cooked, cut, squashed then fried ?
